Japanese Zanthoxylum Peel
Japanese Zanthoxylum Peel is the pericarp of the ripe fruit of Zanthoxylum piperitum De Candolle (Rutaceae), from which the seeds separated from the pericarp have been mostly removed.
Japanese Zanthoxylum Peel contains sanshool as an ingredient and is said to have analgesic and antibacterial effects. The fruit of Japanese Zanthroxylum is known as Japanese pepper. When used as an ingredient like chirimenzansho (boiled, dried baby sardines with Japanese pepper), etc., immature fruits with pleasant aroma are used.
